It can happen. I had to make a double batch of caramel today because mine separated too. I melted the butter first, got distracted, then dumped the sugar all at the same in the melted butter. Big greasy mess. Did it again, carefully and stirring regularly, nice smooth caramel. My saltine crack is now ready to ring in a new (and hopefully better) year.
